I've had this in my files since last March--it's time!
Because I like you all so much (and I must be really busy because this is my "in case of no time to blog" post), I'm sharing with you a delicious, nutritious dinner that is a staple around here.
Warning: This made with all Trader Joe's ingredients. I'm sure you can get them somewhere else, but I've never tried. These ingredients (with the exception of the cheese) can be kept in the pantry indefinitely, making them an ideal for a last-minute dinner "no plan" plan.
You will need:
Polenta
2 cans Turkey Chili
12 oz. cheese
Crumble the polenta into the bottom of baking dish, then top with chili:
Now top with cheese and bake at 425 for 10 minutes, until cheese is bubbly. While this is cooking, make a green salad out of bagged salad.If you feel like that's not enough, open a can of peaches. Serve the Tamale Pie with sour cream and salsa. Voila! Delicious, nutritious and on the table in less than 15 minutes. You're welcome.
I think I was going to insert a picture of the finished product, but . . .
As soon as I comment on this I am going to my handy-dandy cookbook and see what all is involved with polenta...or if there is a place I can just order it...I can get the chili and we have the cheese, sour cream and salsa. I can see this being a favorite around here, too!!

I think we have a Trader Joe's somewhere around here, but I always just go to Giant Eagle because I'm in a hurry. We also have a Whole Foods store that I've always wanted to go to, but I just never seem to have time to drive that extra 20 minutes!

I was supposed to stop at TJs yesterday but maybe it was fate I didn't get there!
Is the canned chili any good? I'm a little hesitant of canned meats.

No Trader Joes here.. boo hoo! I have a similar recipe but intead of polenta on the bottom you put cornbread mix (Marie Callendar's complete just add water!) on top. I think I would like the polenta better though.

oh, excellent! my husband will love you for this. or, I think ... I've only made polente once or twice, but he loves turkey chili and hominy. they're similar, right? hominy and polente? you think hominy would work as a substitute?
